This 'raw', certified organic, leatherwood honey was produced at Peter & Trisha Norris' family owned apiary - Heritage Honey. Their genuine organic leatherwood honey is a truly wonderful product with all the delicious sweet flavour, distinctive beautiful scent and intense fragrance of genuine Tasmanian leatherwood honey. Leatherwood trees grow only in Tasmania of course, and only in the remote and wild rainforests of the north and south west. And with their leatherwood honey Peter and Trisha have used what is often called the raw honey harvesting methods. Processing and bottling honey 'raw' means using at most only gentle warming to help make the honey more liquid and easier and quicker to filter. Raw honey processing often also means that all the honey is harvested from the hive, and not just the mature, sealed honey. Some raw honey proponents also like to keep filtration to a minimum so as to maximize the levels of pollen and other hive products included in the honey. Raw honey is therefore said to have all the natural qualities of the honey, just as the bees made it in the hive. Harvesting honey raw is however more difficult and it takes longer to process and to bottle. And it often leads to much quicker crystallization or 'candying' in the jar. This means a typical jar of raw honey will be either partially or wholly candied, white in colour and with a solid rather than liquid texture. (If you want to use your raw honey in a liquid form all you need do is warm it slightly).
